Summer Hack- Mint Melon Salad

Mint Melon Salad

 

Ingredients

 

1 cantaloupe melon

1 honeydew melon

1 small watermelon

1 bunch basil

1 bunch mint

1/2 cup Rice Wine Vinegar

2 TBSP Lemon Juice

1 TBSP Extra Virgin Olive Oil

1 TBSP Honey

 

Directions 

Cube all melons into a large bowl.  In a food processor combine last 6 ingredients to well blended.  Pour over melon and stir well.  Let sit for 1/2 hour continuing to stir every 10 minutes.  Serve over spinach.  1/2 cup serving size.
